IEC 60335-2-118:2025 deals with the safety of appliances for making ice cream and artisan gelato exclusively operated by professional users. Ice cream makers intended for professional use are employed in commercial environments, such as restaurants, hotels, supermarkets, shops, as well as in preparation areas of bars, bakeries, ice cream shops, institutional catering, and other similar professional settings. Appliances taken into account are those intended for commercial use and similar appliances not intended for normal household use but which can nevertheless be a source of danger to the public, such as appliances intended to be used by laymen in shops, stores, by artisans or on farms, which rated voltage is not more than 250 V for single-phase appliances and 480 V for other appliances. Appliances covered by this standard are provided with a refrigerant condensing unit which is usually incorporated, but for some appliances can be remote.
As far as is practicable, this standard deals with the common hazards presented by these types of appliances including those that use flammable refrigerants and appliances employing R-744 refrigerant. This standard is not applicable to appliances with a mass of flammable refrigerant exceeding the limits specified in 22.112 or to appliances with that use refrigerants with a toxicity classification of B according to ISO 817. It does not cover those features of construction and operation of refrigerating appliances that are dealt with in ISO standards.
This standard also applies to following types of appliances:
– mixers to make ice cream and similar pastry products in which, for the preparation of the product, heating process is made within the appliance before the cooling process;
– appliances for storing whipping cream mix in a refrigerated tank and for whipping the cream for the delivery process;
– freezers designed to produce soft ice cream and dispense it directly into containers;
– machines for soft-serve ice cream;
– batch dispensing freezers.
Attention is drawn to the fact that:
– countries can have additional requirements for appliances incorporating pressure vessels;
– in many countries, additional requirements are specified by the national health authorities, the national authorities responsible for the protection of labour, the national water supply authorities and similar authorities;
– for appliances or parts of appliances intended to be used outdoors, additional requirements can be necessary.
This standard does not apply to:
– split systems having a refrigerant charge of flammable refrigerant exceeding 150 g in any refrigerating circuit;
– ice cream appliances for household use (IEC 60335-2-24);
– appliances intended exclusively for industrial purposes;
– appliances intended to be used in locations where special conditions prevail, such as the presence of a corrosive or explosive atmosphere (dust, vapour or gas).
This second edition cancels and replaces the first edition published in 2020. This edition constitutes a technical revision.
This edition includes the following significant technical changes with respect to the previous edition:
a) the text has been aligned with IEC 60335-1:2020;
b) scope has been revised (Clause 1);
c) requirements for appliances employing R-744 system have been added (7.1, 7.12.1, 22.7, 22.111);
d) additional requirements for appliances employing flammable refrigerant have been added (7.1, 7.6, 7.12, 7.15, 21.105, 22.110, 22.112, 22.113, 22.114, 22.115, 22.116, 22.117, 22.118, 22.119, 22.120, 22.121, 22.122, 22.123, Annex CC);
e) definition of hermetically sealed system has been revised (3.6.113);
f) reference to flammable refrigerant has been deleted (22.7);
g) new subclauses have been added (22.40, 22.49, 22.51);
h) compatibility tests for winding insulation of motor-compressors used with different types of refrigerants and oils have been introduced (22.9);
i) Annex AA has been modified to cover motors that are supplied at a voltage that is different from the rated voltage of the appliance;
j) Annex BB has been updated to align with the latest edition of IEC 60079-15;
k) text in 3.1.9.101, 3.1.9.102 and 3.1.9.103 has been cancelled and the text copied in 5.102;
l) new informative tightness routine test has been added (Annex A).
This part 2 is to be used in conjunction with the latest edition of IEC 60335-1 and its amendments unless that edition precludes it; in that case, the latest edition that does not preclude it is used. It was established on the basis of the sixth edition (2020) of that standard.

L'IEC 60335-2-118:2025 traite de la sécurité des appareils qui permettent de fabriquer de la crème glacée et des glaces artisanales et qui sont exclusivement utilisés par des professionnels. Les fabriques de crème glacée à usage commercial sont utilisées dans des environnements commerciaux, tels que des restaurants, hôtels, supermarchés ou magasins, ainsi que dans les espaces de préparation des bars, boulangeries, glaciers, unités de restauration collective et autres environnements professionnels analogues. Les appareils dont il est question sont ceux destinés à un usage commercial et analogues non destinés à un usage domestique normal, mais qui peuvent néanmoins constituer une source de danger pour le public, tels que les appareils destinés à être utilisés par des personnes inexpérimentées dans les ateliers ou les magasins, par les artisans ou sur des exploitations agricoles, dont la tension assignée ne dépasse pas 250 V pour les appareils monophasés et 480 V pour les autres appareils. Les appareils couverts par la présente norme sont équipés d'un groupe de condensation frigorifique qui est habituellement incorporé, mais cela peut ne pas être le cas pour certains appareils. Dans la mesure du possible, la présente norme traite des dangers courants que présentent ces types d'appareils, y compris ceux qui utilisent des fluides frigorigènes inflammables et ceux qui utilisent le fluide frigorigène R-744. La présente norme ne s'applique pas aux appareils dont la masse de fluide frigorigène inflammable dépasse les limites spécifiées au 22.112 ni aux appareils qui utilisent des fluides frigorigènes de classification de toxicité B selon l'ISO 817. Elle ne traite pas des caractéristiques de construction et de fonctionnement d'appareils de réfrigération qui font l'objet de normes ISO.
La présente norme s'applique également aux types d'appareils suivants:
– les mélangeurs pour la fabrication de crème glacée et de produits pâtissiers similaires dans lesquels, pour la préparation du produit, un procédé de chauffage est appliqué dans l'appareil avant le procédé de refroidissement;
– les appareils pour le stockage du mélange de crème à fouetter dans un réservoir réfrigéré et pour le fouettage de la crème avant le procédé de livraison;
– les congélateurs conçus pour produire de la crème glacée molle et la distribuer directement dans des récipients;
– les machines à glace à l'italienne;
– les congélateurs distributeurs par lots.
L'attention est attirée sur le fait que:
– des pays peuvent avoir des exigences supplémentaires pour les appareils qui comportent des récipients sous pression;
– dans de nombreux pays, des exigences supplémentaires sont spécifiées par les organismes nationaux de la santé, par les organismes nationaux responsables de la protection des travailleurs, par les organismes nationaux responsables de l'alimentation en eau et par des organismes similaires;
– pour les appareils ou parties d'appareils destinés à être utilisés en extérieur, des exigences supplémentaires peuvent être nécessaires.
La présente norme ne s'applique pas:
– aux systèmes biblocs dont la charge de fluide frigorigène inflammable dépasse 150 g dans un quelconque circuit de réfrigération;
– aux sorbetières destinées à un usage domestique (IEC 60335-2-24);
– aux appareils prévus exclusivement pour des usages industriels;
– aux appareils destinés à être utilisés dans des locaux qui présentent des conditions particulières, telles que la présence d'une atmosphère corrosive ou explosive (poussière, vapeur ou gaz).
Cette deuxième édition annule et remplace la première édition parue en 2020. Cette édition constitue une révision technique.
Cette édition inclut les modifications techniques majeures suivantes par rapport à l'édition précédente:
a) le texte a été aligné sur l'IEC 60335-1:2020;
b) le domaine d'application a été révisé (Article 1);
c) des exigences ont été ajoutées pour les appareils qui utilisent un système au R-744 (7.1, 7.12.1, 22.7, 22.111);
d) des exigences supplémentaires pour les appareils qui utilisent des fluides frigorigènes inflammables ont été ajoutées (7.1, 7.6, 7.12, 7.15, 21.105, 22.110, 22.112, 22.113, 22.114, 22.115, 22.116, 22.117, 22.118, 22.119, 22.120, 22.121, 22.122, 22.123, Annexe CC);
e) la définition du système hermétiquement étanche a été révisée (3.6.113);
f) la référence au fluide frigorigène inflammable a été supprimée (22.7);
g) de nouveaux paragraphes ont été ajoutés (22.40, 22.49, 22.51);
h) des essais de compatibilité pour l'isolation des enroulements des motocompresseurs utilisés avec différents types de fluides frigorigènes et d'huiles ont été introduits (22.9);
i) l'Annexe AA a été modifiée pour couvrir les moteurs qui sont alimentés à une tension différente de la tension assignée de l'appareil;
j) l'Annexe BB a été mise à jour pour s'aligner sur la dernière édition de l'IEC 60079-15;
k) le texte des 3.1.9.101, 3.1.9.102 et 3.1.9.103 a été supprimé et copié au 5.102;
l) un nouvel essai d'étanchéité de série informatif a été ajouté (Annexe A).
La présente partie 2 doit être utilisée conjointement avec la dernière édition de l'IEC 60335-1 et ses amendements sauf si cette édition l'exclut. Dans ce cas, la dernière édition qui n'exclut pas la présente partie 2 est utilisée. Elle a été établie sur la base de la sixième édition (2020) de cette norme.
Le contenu du corrigendum 1 (2026-01) a été pris en considération dans cet exemplaire.
